>>Soups are one of those things that always make me feel better if I have a cold or if I've just had a bad day.
Well, today on Tassie's table, we'll be making one of my favorites, which is a creamy carrot soup.
So we're gonna start with a nice warm pan.
And to that, I'm going to add about a tablespoon or so of olive oil.
And I want to start with a little bit of onion, (onions sizzling) Let's just give that a stir through that nice hot oil.
(onions sizzling) And then I want to add one clove of garlic and about half a pound of carrots.
Now, I've just cut these really nice and small.
(food sizzling) At this point, I want this to just rest in this heat.
I'll stir it occasionally, but my goal over medium low heat is just to sweat the carrots and the onion until everything starts to get soft.
Now, I want to take a little bit of freshly grated ginger.
Now, this is what a ginger root looks like.
This is unpeeled and this is peeled.
Now, don't be alarmed in the grocery store.
If the ginger root is huge, you can actually just break off the piece you want, as long as it's not pre-wrapped, and then you can take the ginger root that you need.
Now, I wanna drop in about half teaspoon of this grated ginger root.
I'm just gonna let that hit the heat just a little bit and then I'm going to add a little bit of apple cider vinegar.
Now, the apple cider vinegar will take away a little bit of the sweetness from the carrots, but it also enhances all of the other flavors.
And then I'm gonna add a cup and a half of chicken stock.
There we go.
Nice chicken stock.
Oh, now what I wanna do is just bring this to a simmer and cook my carrots until they're nice and soft.
And then we're going to put this through a blender, and it's going to be an amazing carrot soup.
Just give that maybe 10 minutes.
So let's pour this beautiful mixture into our blender.
And remember, it's hot, so be very careful and slow.
(mixture pouring) Kinda stand back too.
You don't wanna get burned with this hot liquid.
Now, the key when you're blending something that's hot is to take the top out of your blender.
That way when your blender top is on and the steam is coming up as you blend, you're not going to blow the top off.
But it's also important to take a little cloth.
You can take your dish towel and just put it across that top with your hand, always with your hand, and then blend.
(blender whirring) Now you can see what happens with that cloth on the top.
So you don't want to just use your hand there.
And you see the steam coming out of the top of the blender, so your soup is ready now.
Let's pour out into a bowl and then we'll garnish it.
I absolutely love this soup, and it makes enough for two servings.
(whimsical music) Let's catch our little drips.
And then we just want to dollop with a little sour cream.
You can use yogurt if you like.
And then let's top it with just a little bit of chopped onion, just scattered around, chives also work great with this, but I just love that little bit of onion flavor as I bite into this soup.
